Ingredients and Preparation Steps
- Begin by preparing the broth with 1 gallon of water, 6 cloves of garlic, a couple of sprigs of fresh cilantro, half an onion, and a generous pinch of kosher salt.
- Add three chicken thighs (with skin), four chicken legs (with skin), and two meaty breasts to the pot. Simmer until the chicken is tender, approximately 40 to 45 minutes.
Making the Green Sauce
- For the green sauce, gather ingredients: 1 pound of tomatoes, 2 poblano peppers, and 2 serrano peppers. Roast these in bacon fat at 400°F until beautifully charred.
- Once the chicken is done boiling, blend together the cooked garlic and onion with tomatillos, roasted peppers, Mexican oregano, epazote leaves (a nice bunch), salt to taste, and a little cumin.
Final Assembly
- Cook your sauce for about 5 minutes until it changes color and darkens slightly.
