Cooking a Basic Chicken Curry
In this cooking tutorial, the chef demonstrates how to prepare a simple chicken curry suitable for beginners or those with limited time for cooking.
Preparing the Base
- Heat a pan and add 4 tablespoons of oil.
- Use any type of oil; coconut oil is used in this demonstration.
- Start by sautéing 4 sliced onions, 2 chopped green chilies, and 2 tablespoons of ginger-garlic paste in the hot oil.
- Add 1 teaspoon of salt and sauté until the onions turn golden brown.
Adding Spices and Chicken
- Reduce the flame and add turmeric powder, coriander powder, chili powder, and chicken masala. Stir well for 1 minute.
- Introduce chopped tomatoes followed by the chicken pieces. Mix thoroughly on high flame for about 2 minutes.
Cooking Process
- Pour in 1½ cups of water and let it boil before simmering for 10 minutes with the lid closed. Repeat this process twice for a total cooking time of around 20 minutes until the chicken is cooked through.
- Add curry leaves, crushed black pepper, and optionally more crushed pepper for extra spice. Let it sit for 30 minutes before serving; adding coconut milk can enhance flavor further.
