Ingredients
Blended spices consisting of garlic, shallots, candlenut, and shrimp paste
Bird's eye chili for spiciness
Eggs and beef meatballs for fillings
Choy sum, cabbage, celery, and green onions for veggies
Fresh noodles (can use instant or egg noodles)
Making the Dish
Blend the spices with oil using a blender.
Chop bird's eye chili.
Boil noodles until springy but not mushy.
Sauté blended spices in a large wok until fragrant.
Add beaten eggs to wok and cook until done.
Mix cooked eggs with spices in wok.
Add bird's eye chili, meatballs, and white part of green onions to wok.
Add soy sauce, sweet soy sauce, chili sauce, oyster sauce to wok.
Add noodles to wok along with pepper, sugar, stock powder/flavor enhancer.
Lastly add veggies including celery and green onions.
Serving Suggestions
Eat with pickles and crackers to complete the street food experience.
Overall this is a simple yet flavorful recipe that can be made quickly. The key is getting the right texture of the noodles which should be springy but not too mushy.
