Mie Goreng Jawa atau juga dikenal dengan Mie Tek-Tek memiliki cita rasa yang khas. Menggunakan bumbu rempah dan kecap menjadikan sajian ini lebih terasa manis. Resep Mie Goreng Tek-Tek (untuk 1-2 porsi) Bahan: 150 gr mie basah (berat sebelum direbus) 3 batang caisim, potong 3 lembar kol, potong 1 batang daun bawang, potong 1 batang seledri, potong 5 buah cabai rawit, cincang 3 buah bakso sapi, iris 2 butir telur Bumbu: 3 siung bawang putih, parut 3 siung bawang merah, iris 1 butir kemiri 2 gr terasi 2-3 sdm kecap manis 2 sdt kecap asin 1 sdm saus tiram ½ sdm saus sambal ¼ sdt merica ½ sdm gula 1 sdt penyedap / kaldu bubuk Pelengkap: Bawang merah goreng Langkah: 1. Rebus mie hingga matang kemudian bilas dengan air mengalir dan tambahkan sedikit minyak lalu aduk rata dan sisihkan 2. Blender bawang merah, bawang putih, kemiri, terasi, dan sedikit minyak hingga halus 3. Tumis bumbu hingga matang lalu sisihkan ke pinggir wajan 4. Tambahkan sedikit minyak lalu masukkan telur kemudian aduk rata 5. Masukkan bakso dan daun bawang bagian putih kemudian tumis hingga wangi 6. Tambahkan saus sambal, kecap manis, kecap asin, dan saus tiram lalu masukkan mie kemudian aduk rata 7. Javanese Fried Noodles Recipe (yield: 1-2 servings) Ingredients: 150 g fresh noodles (weigh before boiling) 3 pc choy sum, sliced 3 pc white cabbage, sliced 1 pc green onions, sliced 1 pc celery, sliced 5 pc bird’s eye chili, chopped 3 pc beef meatballs, sliced 2 pc egg Spices: 3 clove garlic, grated 3 pc shallot, sliced 1 pc candlenut 2 g shrimp paste 2-3 tbsp sweet soy sauce 2 tsp soy sauce 1 tbsp oyster sauce ½ tbsp chili sauce ¼ tsp pepper ½ tbsp sugar 1 tsp stock powder / flavor enhancer Others: Fried shallots Steps: 1. Boil the noodles. Rinse with running water and add some oil. Stir and set aside. 2. Blend the shallots, garlic, candlenut, shrimp paste, and a bit of oil to a paste. 3. Sauté the spices until fragrant. Set it to the side. 4. Add a bit of oil. Add the eggs in and stir. 5. Add the meatballs and the white part of green onions in. Sauté until fragrant. 6. Add the chili sauce, sweet soy sauce, soy sauce, and oyster sauce in. Add the noodles in and stir. 7. Season with pepper, sugar, stock powder / flavor enhancer. Mix evenly and cook at high heat. 8. Add the vegetables in. Add a bit of water if it gets too dry, then turn the heat off. 9.
