  • Begin by placing 1 liter of milk in a saucepan. Add the peels of half an orange, half a lemon, and a cinnamon stick (about the size of a finger). Heat on medium-high until just before boiling.
  • Once the milk is heated, remove it from heat, cover, and let it infuse for 30 minutes to 1 hour.

Mixing Egg Yolks and Sugar

  • In a bowl, combine 6 large egg yolks with 100 grams of sugar. Mix gently until integrated.
  • Add 40 grams of cornstarch (maicena) to the mixture and stir lightly.

Straining Mixture

  • Use a fine mesh strainer over the bowl to filter the infused milk into the egg mixture. Ensure everything is well combined.

Cooking Process

  • Transfer the mixture into a pot over medium heat, stirring continuously with either a wooden spoon or silicone spatula.
  • To check if it's ready, observe the back of your spoon; when coated but not too thick yet, continue cooking until reaching perfect density.

Final Steps Before Serving

  • Once at desired thickness, strain through another fine mesh sieve into a large bowl. Distribute into small ramekins (6 small or 4 larger).
