Making Napolitan Pizza in Your Own Kitchen
In this video, Lucio shows how to make Napolitan pizza in your own kitchen. He explains the process of making the dough, cooking the pizza, and eating it.
Making the Dough
- The dough is made with 1 kilo of double zero flour, 650 ml of water, 30 grams of salt, fresh yeast (or half a teaspoon of dry yeast), 10 grams of sugar, and 25 grams of olive oil.
- Dissolve the salt into the water and add a little bit of flour into the water. Add sugar and olive oil to help with browning and fragrance.
- Knead for around 15-20 minutes until it becomes less sticky. Cover with a cloth and leave at room temperature for around 16 hours.
Cooking the Pizza
- After leaving the dough for 16 hours, take it out and put it on a bench. Make bowls that are around 250 grams each.
- Leave outside at room temperature for another three hours before cooking.
- Cook in an electric domestic oven.
Eating the Pizza
- Enjoy!
Making the Dough

Steps
- Cover everything for 16 hours.
- After 16 hours, put the dough on the bench and make a ball.
- Leave the dough to proof for another three hours.
Stretching the Dough
In this section, Vincenzo demonstrates how to stretch pizza dough.
Steps
- Grab the well-proved dough and add a little flour.
- Start stretching from the bottom all the way up.
- Turn the pizza on its other side and repeat.
- Slap the dough to finish stretching it.
Cooking Pizza in Oven
In this section, Vincenzo explains how to cook pizza in an oven.
Steps
- Preheat stone in oven at maximum temperature for one hour.
- Transfer stone above oven grill using caution not to burn yourself.
- Place pizza on stone under grill for a few minutes (around 3).
- Turn pizza if necessary depending on your oven's elements.
Toppings and Olive Oil
In this section, Vincenzo discusses toppings and olive oil for his Napoletana-style pizza.
Steps
- Cut toppings into julienne strips of medium thickness.
- Drizzle olive oil over toppings before placing them on top of stretched dough.
